Flax Buttermilk Pancakes...for dinner!

Sometimes you just have to have breakfast for dinner!

Pancakes sounded good for supper so I decided to make them using my latest "go-to" recipe for pancakes.  (Most of the time I use my tried and true recipe from my Betty Crocker cookbook, but when I want a change of pace, I have been using the following...)
I found this recipe for Flax Seed Pancakes on the back of my Stober Farms Golden Flax Meal that I bought at Sam's Club (or maybe Costco...)
Here is the recipe, and the changes that I made to it (because I typically don't have all of the exact ingredients, haha!)  
Flax Buttermilk Pancakes (original recipe is here):

  • 1/4 Cup - Organic Milled Flaxseed
  • 2 tsp - Baking powder
  • 1 cup - Unbleached White flour (recipe called for whole wheat flour)
  • 1/2 tsp - Baking soda
  • 1 Tbsp - White sugar
  • 1 cup - Low-fat buttermilk (made my own w/ 1 T. vinegar + milk to make 1 cup)
  • 1 egg
  • 1/2 tsp - Salt
  • 1 Tbsp - Coconut oil, melted (recipe calls for Canola oil) I buy my coconut oil at Sam's Club or Costco, you can also get it on Amazon or many other online sites
Mix flaxseed, baking powder, flour, baking soda, sugar together.  Combine liquid ingredients and pour into and mix into dry ingredients.  
Prepare pancakes on your griddle!

    1. Thanks so much for posting this! I accidentally threw the flax bag away without writing down the recipe and now they don't sell that brand at Costco anymore! You're a lifesaver.
