Lemon Squares
Sunny, spring weather? Why not make some sunny lemon bars???
Yum!
My mother is the one that usually makes these, but I wanted to give it a try...I think I can make them! LOL!
I am adapting a recipe from my faithful Betty Crocker's Cookbook...
Lemon Squares
*1 cup flour
*1/2 cup butter
*1/4 cup powdered sugar
*1 cup sugar
*2 T. lemon juice
*1/2 tsp. baking powder
*1/4 tsp. kosher salt
*2 eggs
Mix together flour, softened butter, and powdered sugar until crumbly. Press into an ungreased 8 x 8 inch (or 9 x 9) square pan.
Bake at 350* for 20 minutes, or until light gold in color. Mix together the remaining ingredients until light and fluffy.
Pour onto the hot crust. Bake for 25 minutes, or until an indentation no longer appears when lightly touched in the middle.
Cool, and cover lightly with a dusting of powdered sugar.
Cut into squares.
Enjoy!
