Menu Plan Monday...week of August 20

What a fun weekend! We got to spend time with old college friends, as my college roommate was in town! We had a blast and always wonder why we don't get together more often!
In last week's post, I confessed that I had gotten burned out on menu planning and making meals, so my family encouraged me to simplify my plans.

It worked out rather well, and I will continue on with more of a regular plan, using just a few meal plans/recipes over and over.

This is what I will be making this week:

MONDAY:  Crock Pot Orange Chicken Stirfry (discovered recipe last week...have to try!)
TUESDAY:  Taco Tuesday  (w/ ground beef this week)
(My sister and niece arrive tonight, so the rest of the week might totally be something different, but I'll have a plan anyway!)
WEDNESDAY:  Baked Potato Bar (didn't make last Friday)
THURSDAY:  Chicken Cherry Pasta Salad
FRIDAY:  Crock Pot Chili (with Cowboy Bread to go along with it!)

Menu Plan Monday...week of July 16

Happy Anniversary to my wonderful parents!  They are celebrating 58 years of marriage today! 

Isn't that awesome!!!??


My menu plan has been missing in action these last couple of weeks...it has been SO busy with the baseball season winding down that I had thrown any kind of planning out the window...probably at a time I needed it most, but since we were running so many different directions we just ate a lot of sandwiches and pasta! 

My oldest's baseball team came in 2nd place this weekend in the state tournament, and his baseball season has now come to a screeching halt!  I'm going to miss watching that team! 

But...I can maybe plan a few family meals too...

MONDAY:  (On the Go) Pizza Rolls  (gonna try to make an extra batch too!)

TUESDAY:   Easy Summer Italian Pasta Salad

WEDNESDAY:  Paninis on the George Foreman Grill

THURSDAY:  Chicken Soft Tacos

FRIDAY:  Hamburgers on the grill (if the weather cooperates!)

Menu Plan Monday...week of June 18


We enjoyed a wonderful weekend...one of the few this summer without any baseball or soccer tournaments.  Those are fun, but it was great to be free from being scheduled, for a change!

Second week of "summer break mode", but even so, life is busy.  I must not slack off in my meal planning.

This is what the plan will be this week, as we have NO evenings without a practice or game for someone in the family:

MONDAY:  Tacos (fixing the ground beef in the crock pot)

TUESDAY:   Chicken Cherry Pasta Salad

WEDNESDAY:  Grilled Cheese Sandwiches

THURSDAY:  "Franks" and Beans

FRIDAY:  Easy Summer Italian Pasta Salad

Menu Plan Monday...week of June 4

First of all, congratulations to the winners of my Honey Bunches of Oats Giveaway!

But, it's Monday, so on to my menu plan...

It is the last week of school for my boys!  Yippee!

I love summer!  :)

Last week I tried a new recipe, Lawnmower Tacos, from Life as Mom's blog.  I am excited to say that we have a winner!  My family LOVED them, and I am thrilled!  :)  (P.S.  It's an easy freezer meal too!)

Here is my plan for meals this week:

MONDAY:  Pizza party and parents' vs. kids' soccer game at my youngest's last practice (fyi...my husband will be playing, not me! lol!)

TUESDAY:  T-Bone steaks on the grill!  (Thanks to a dear friend who included them with the grill they were giving away!)  Yum!  Thank you to the Jones family!

WEDNESDAY:  Paninis on the George Foreman Grill

THURSDAY:  Rice and Bean Burritos

FRIDAY:  Crock Pot BBQ Chicken Sandwiches (made a big batch, as in the pork recipe in the link, and have portions in the freezer!)

Menu Plan (Monday) Tuesday...week of May 28


I LOVE 4 day weeks!  We enjoyed a wonderful weekend as a family.  We chose not to go up to my parents' cabin, as the weather report was not too friendly for outdoor activities, but had a fabulous time during our "staycation".
We used our MN Historical Society membership (which we purchased with a fabulous Groupon deal!) to visit the Minnesota History Center.  We hadn't been there for several years, and we always enjoy our time checking out the exhibits...some new and some old favorites.
If you live in MN, and haven't had a chance to visit the MN History Center, I would highly recommend it!

On to my menu plan:

MONDAY:  We had a wonderful meal at a graduation open house, and then I fixed a late supper (hamburger, and a steak that was thawed and ready to grill) for my oldest two at 8:00, when they were finished with baseball practice!  Believe me...that is NOT how we usually eat around here!  LOL!

TUESDAY:  Fixing several pounds of chicken breast.  Some for Crock Pot BBQ Chicken sandwich filling, which we will have tonight.

WEDNESDAY:  Sandwiches (as we have one out of town baseball game, and one home game...try to avoid eating out!) 

THURSDAY:  Lawnmower Tacos (new recipe that I have wanted to try)

FRIDAY:  Angel Hair Pasta with Sauce

Menu Plan Monday...week of May 21

Here we go again...Monday morning, and I'm struggling with a menu for the week!  LOL!
Once again, I am trying to plan around lots of week night activities, so here goes:

MONDAY:  Hot Dogs and Rice??  strange, but true...hadn't planned my menu yet, and this is what the 2 youngest chose for supper! 

TUESDAY:  Crock Pot BBQ Chicken Sandwiches (using this recipe for Crock Pot BBQ Pork Sandwiches)

WEDNESDAY:  My birthday...I'm not cooking...we will be out of town, at a double header for our 15 year old!  Yippee!

THURSDAY:  Ham and Cheese Melts w/ Poppyseed Mustard
 

FRIDAY:  Taco Salad (this has become a favorite)

Looking forward to a long, 3 day weekend!  Yay!

Menu Plan Monday (on Tuesday!)...week of May 14


Even though it gets a little discouraging, I am going to try my best to think ahead about the meals I will be making for my family.
Discouraging, because we hardly seem to be at home as a family (for meals) these days. 
Therefore my plan:
**I will have convenient meals while we run from field to field.
**I will enjoy the time watching my boys play ball (which we usually do as a family).
**I will cherish the times when we are actually home together for a meal...

Here's what is going on this week:

MONDAY:  Sandwiches...(2 games and a practice)  I bought a B.O.S.S. at Rainbow Foods to enjoy after...if you don't know what a B.O.S.S. is, and you have a Rainbow Foods by you, you might want to check this out....these are Big Oversized Sub Sandwiches, and they feed my whole family for $5.99!  Can't beat that!  :D

TUESDAY:  Easy Ground Beef & Cheese Quesadillas 

WEDNESDAY:  Easy Summer Italian Pasta Salad 

THURSDAY:  Tuna (Pasta) Salad

FRIDAY:  Crock Pot BBQ Pulled Pork Sandwiches (in freezer, but it might actually be BBQ chicken--I didn't label it!  LOL!)



Like I mentioned before, we usually are doing all of this as a family.  My boys watch their brothers' games (unless they have a practice or game themselves.)  I am very thankful for that...people sometimes ask how we get our boys to watch their brothers' games, and I am kind of surprised by the question.  I guess we have always expected that of them...and I really think they enjoy it too.

What a blessing!

Menu Plan Monday...week of May 7


What a gorgeous morning!  We have had a LOT of rain, which makes everything SO green out my window!  I am thankful for some sunshine to help dry up the soggy backyard however, and hope to get some work done in the gardens this week.

Well, as I look at the practice/game schedule for the week, I'm not sure what to plan!!!  Yikes!  A lot of eating on the go, because all the schedules seem to overlap, and we are not all together (at home) until after 8 some evenings!!!

So, here is what I am planning for meals this week:

MONDAY:  Bring sandwiches and fruit/veggies along to game/practices.

TUESDAY:  Make-Ahead Unstuffed Pasta Shells

WEDNESDAY:  Bring sandwiches and fruit/veggies along to two consecutive games.

THURSDAY:  Picnic style supper again...at the baseball/soccer fields!

FRIDAY:  Hamburgers on the George Foreman (no evening plans!!!  Yippee!)

This is crazy!!!  I don't mind eating at games, but it's the packing it all up to take it with us that I don't like!  ;)

Menu Plan Monday...week of April 23



My baby turned 10 yesterday!  ...and it is true, that the older you get, the faster time seems to fly by!

I can remember the days when my boys were young, and I often felt overwhelmed.  If that's where you are right now, as a mom, I can totally relate!  It IS hard, but you can do it!!

These days with a 15, 13, and 10 year old can be exhausting also, but not as physically exhausting, as when they were young.

I pray that I can always enjoy the stage of life that I am in.

How about you?  What stage are you in??

Something I have learned to help me out these days is to try my best to meal plan!  So here goes for the week!

MONDAY:  Shredded BBQ chicken sandwiches, using this recipe (with chicken, instead)

TUESDAY:  Ham & Cheese Pasta Bake

WEDNESDAY:  Sandwiches, Diner's Choice

THURSDAY:  Chicken Cherry Pasta Salad

FRIDAY:  Little Caesar's pizza, as we will be hosting my 10 year old's birthday party!

Menu Plan Monday...week of April 2

Yay!  It's Spring Break for our family!

No traveling plans, but plans to enjoy a slower pace this week.

Here's what I will be fixing for dinner this week:

MONDAY:  Ham & Cheese Melts w/ Poppyseed Mustard
(actually when it came time for making dinner, they chose cold sandwiches over hot...easier for me!!!!)

TUESDAY:  Tuna (Pasta) Salad

WEDNESDAY:  No Boil Pasta Bake  (Fabulous recipe I found...I made a few changes, but the WHOLE family loved it!)

THURSDAY:  Easy French Dip Sandwiches  (this was so good...making it again!)

FRIDAY:  Crockpot Chicken Tacos 

I have come to the realization that there are a few meals that my family really loves...why not just keep things simple, and make them most of the time!

So, it might get kind of boring in my postings, as you see the same recipes over and over, but the reason I do post my menu plan, is to make myself accountable to at least have a plan!
Hopefully it can inspire you to make a plan too (and maybe discover a family favorite recipe along the way!)

Menu Plan Monday...week of March 26

Well, after being spoiled with the early return of spring/summer weather, we have been shocked at morning temperatures in the high 30s/low 40s these last few days!  This morning it is raining, but I must remember that, "April (March) showers, bring May (April) flowers!"
After being in the mood for salad last week, I have quickly changed my wants to soups and comfort food again!  LOL!

I saw the Easy French Dip sandwiches on Laura's menu plan last week, and thought my family might really like them, so that's what I will be trying for today.

Here's the plan:

MONDAY:  Easy French Dip Sandwiches 

TUESDAY:  Scalloped Potatoes (with Ham) 

WEDNESDAY:  Sloppy Joes or Sloppy Josephs (No church tonight, so I will make more than cold sandwiches!)

THURSDAY:  Crockpot Chicken Tacos 

FRIDAY:  Hamburgers on the George Foreman Grill (I didn't make these last week, because I hadn't bought my ground beef!  Oops!)

Menu Plan Monday...week of March 19

"Spring, spring!", sang the robin.  (from "Home for a Bunny"...a childhood favorite!)



That's what we have been hearing all week "up here in the north land."  We have been enjoying very strange, but very welcomed spring-like weather...and I think the birds, trees, and critters are a little confused! 

I'm not complaining!!!  :)

It's funny though...the warmer weather, and I am no longer craving "comfort food", but thinking more about salads!  Haha!  So, this is the plan:

MONDAY:  Taco Salad

TUESDAY:  Chicken Tenders and French Fries

WEDNESDAY:  Tuna (Pasta) Salad

THURSDAY:  Rice and Bean Burritos  

FRIDAY:  Hamburgers on the George Foreman Grill

That's the plan...of course, I know that things might (and probably will) change along the way...but at least I have a "framework" in place!  :)

Menu Plan Monday...week of March 12

Here I am again...Monday morning, and being forced to "meal plan"...

Okay, so no one is "forcing me" to meal plan, but I am forcing myself to do it.  It really does help me (most of the time...when I follow it)!  Now, if I could figure out how to get the grocery shopping and meal making done for me....haha!

We will be enjoying a couple of weeks between basketball and baseball in our house, so I am hoping to take advantage of this family dinner time, and plan some great meals!

Here goes...

MONDAY:  Super Easy Chicken Enchilada Skillet (found this one in a Kraft magazine...it's a keeper!)

TUESDAY:  Shepherd's Pie (haven't made this for years!  I will try to post later.)

WEDNESDAY:  Sandwiches, Diner's Choice and maybe soup too (church night...an easy meal to count on)

THURSDAY:  Chicken Breasts over Rice

FRIDAY:  Taco Salad (or "walking tacos")

There, now I feel better....still, anyone out there want to do the shopping and cooking for me????

Menu Plan Monday...week of March 5

Ahhhhh....it was nice to sleep in my own bed last night!  Even though we were only in a hotel for one evening because of an out of town basketball tournament...there's no place like home!  :)

We enjoyed a fun weekend with great families that we have gotten to know, and the boys won 4 out of the 5 games they played, coming home with a 2nd place medal (this mom likes the medals...they take up less space!)


Now, back to reality...laundry, and meal planning!  LOL!

After checking out what I have on hand, this is what I am planning for the week:

MONDAY:  Ground Beef Patties or Meatballs (I'll see what I get done today!) and Easy Oven Fries (made with red potatoes)

TUESDAY:  Crockpot Chicken Tacos
(This recipe has become a favorite!!!  It is SO easy and tasty!)

WEDNESDAY:  Sandwiches

THURSDAY:  Ham and Broccoli Casserole (I will be adapting this recipe)

FRIDAY:  Pasta Bake

Do you have your plan in place for the week?  It sure makes life for me so much easier when I do.  Even if I stray from the plan, it helps me at least a huge portion of the week!

Menu Plan Monday...week of Feb. 27 & Walking Tacos

I hope everyone had a great weekend...

We had a busy one with basketball tournaments, but as of yesterday, the basketball season is done for our youngest.  One less child to get to practices this week!  That helps a little....lol!
While visiting many concession stands at the basketball tournaments, I have been reminded of a great idea for a fun meal..."walking tacos"...such an easy and fun way to eat a taco.
Do you know about "walking tacos"?  I first learned about them from my sister-in-law.
All you need are:
1.  Individual bags of Nacho Cheese Doritos (or Fritos)
2.  Taco meat
3.  Shredded Cheese
4.  Shredded Lettuce
5.  Salsa
6.  Sour Cream
Open the chips.  Place each topping in the bag.  Walk and eat.  Haha!  Not really, but it does make for a great meal at open houses, etc.


Anyway....this is my plan for the week:

MONDAY:  Chicken Tenders and Crockpot Chicken Curry (from the freezer) and Rice---this worked out well...my husband doesn't care for the chicken tenders, and my boys didn't care for the Chicken Curry!  Hee hee!

TUESDAY:  Ground Beef and Cheese Quesadillas

WEDNESDAY:  Sandwiches

THURSDAY:  Creamed Tuna on Baking Powder Biscuits

FRIDAY:  Angel Hair Pasta and Sauce (such an easy thing to fix after a basketball game!)

Menu Plan Monday (or Tuesday)...week of Feb. 20

Better late than never..........

I enjoyed a long, 3 day weekend, as my older two were off because of President's Day!  We did actually have a planned meal last night...I just didn't get it posted here!  LOL!

This is the plan for the week:

MONDAY:  Chicken Soft Tacos (similar to last week, just made in the oven instead...minus the taco seasoning...still very tasty!)  Bonus:  the leftovers went into the freezer...LOVE when that happens!

TUESDAY:  Game day...pasta shells and sauce (in shifts...practices tonight also)

WEDNESDAY:  Sandwiches

THURSDAY:  Sloppy Joes

FRIDAY:  Game day...eating in shifts...once again...what's a mom to do??!!!  Have some healthy choices on hand....cereal, fresh fruit, Greek yogurt...pb and j always work!

As much as I love basketball, it will be much easier to plan my meals when we have a couple weeks off in between basketball and the start of baseball!  :D

Menu Plan Monday...week of Feb. 13

My boys had a very successful basketball weekend with their teams!
Two first place trophies, and one 2nd place trophy!  Great job, boys!

I am constantly amazed at the amount of energy these boys, ages 9 to 15, can expend!  Where do they get it?!!!

I better do my job and make some good food for them!

This is the plan:

MONDAY:  Trying this one that I found on Pinterest...Crock Pot Chicken Tacos


TUESDAY:  It's Valentine's Day!  I'm feeling unprepared....it is also a night of basketball games, so.....Waffles (using my "Heart Waffle Iron")




WEDNESDAY:  Sandwiches (Church night plan)

THURSDAY:  Ham and Cheese Quiche ("no crust" method...will try to post recipe later!) 

FRIDAY:  Another basketball evening...probably spaghetti when we all get back home!!!  :D

I need to ask all of you who have busy kids, with evening activities that keep them away over the dinner hour...what do you do for meals?  This is our first year of high school sports...it is very fun, but I feeling that I haven't done the best job in meal planning.

Menu Plan Monday...week of Feb. 6



Wow!  It was a tiring weekend of basketball...and I didn't even play!  Haha!

My husband has a birthday this week, and I am so excited that we don't have any practices that night!  We can actually have a family dinner to celebrate! 

My plan this week will include an item from last week that never got made...it seems like I never have a week that goes exactly as planned...oh well!

MONDAY:  Meatballs (planning to make all 3 lbs. worth...freeze the rest for later)

TUESDAY:  Slow and Easy Asian Chicken
This is the one that didn't get made last week...I think my husband will enjoy this for his birthday!  :)

WEDNESDAY:  Sandwiches (church night)

THURSDAY:  Frugal Freezer Chicken Vegetable Soup
(Hopefully with a loaf of homemade Classic French Bread)

FRIDAY:  Spaghetti (an easy "after the basketball game" meal to make)

We finally have some measurable snow on the ground here!  Unfortunately, the drizzling rain preceded it and made for some slippery driving.  Thankfully, I didn't have to get anywhere this morning, but my husband did...rush hour is never fun, and certainly not when there has been snow!  :(

Because of the weather, I am once again in the mood for comfort foods...soups and such, will be on my mind and menu this week.

MONDAY:  Split Pea and Ham soup (with added tomatoes) -- after reading a friend's Facebook status this morning, I decided to make this today!  Hopefully, it will not be greeted with too many groans...never a favorite with my children, but my husband loves it (and he had a hard drive today)!!!  :)

TUESDAY:  Sloppy Joe and/or Maid-Rite sandwiches (both fillings in freezer)

WEDNESDAY:  Sandwiches, Diner's Choice

THURSDAY:  Crockpot Black Bean Chili

FRIDAY:  Tator Tot Hotdish (a family favorite---no activities tonight, I will actually have time to make this one!)

Last week, I tried a new recipe, Ham and Cheese Pot Pie.  It was a change from your typical pot pie.  I had the family rate it for me (1 - 5 stars).  It received between 3 and 3.5 stars.  I think I will make it again, but not in the near future!

Menu Plan Monday...week of January 16


We enjoyed a wonderful day off of all events on Saturday.  I even resisted making my family work ALL day long!!!!  :D  (We did finally get the Christmas tree taken down, however)!

Today, in celebration of Martin Luther King Jr. we are enjoying a long weekend also. 


This is what is on the plan for the week ahead:
MONDAY:  Turkey & Cheese Melts with Easy Oven Fries

TUESDAY:  Meatballs (from my mom!) in the Crock Pot, smothered with homemade BBQ sauce

WEDNESDAY:  Soup and Sandwiches, Diner's Choice

THURSDAY:  Ham & Cheese Pot Pies (new recipe to try!)

FRIDAY:  Spaghetti
