Easy Summer Italian Pasta Salad
I thought I would share a favorite summer recipe of mine. I don't think I have ever made it the same, as I use what I have in my fridge and pantry at the time, to make it. Today I made it with only adding tomatoes, and I thought it was really good!
Easy Summer Italian Pasta Salad
*1/2 package small shell pasta (or other shapes) cooked, as directed on package and cooled
*1 cup tomatoes (cherry or grape, or larger tomatoes, cut in chunks)
*Italian dressing--shake on desired amount and mix (I know this is vague, but I would much rather have too little than to have my pasta drowning! LOL!!)
*Any other add-ins, depending on what your garden or local grocer is producing, including sliced cucumbers, zucchini, broccoli, carrots, black olives
Toss all ingredients and chill until serving.
This is so easy, but it "Works For Me"!!!! :)

Sounds yummy. A good cook taught me years ago that pasta salad is a good time to use the real cheap store brand Italian dressing. Parmesan cheese is also very good on this.

Yes Melanie!
ReplyDeleteI forgot to put parmesan cheese!!! I usually add it. I sometimes add pepperoni slices also...if I have them. Good idea about keeping the cost down by using store brand dressing. Thanks! :)
I just love pasta salad. This looks good, and I'd throw in some Feta cheese or some fresh mozzarella, too!
ReplyDeleteI have a recipe that is similiar to this with cubed mozzarella, broccolli and green olives in it. It is really good and actually can last up to 3 weeks before going bad. I should make some for camping this week. Thanks for visiting The Coupon Posse', hope to see you again soon :) ~Leah
