Wow! What a busy, fabulous weekend! My oldest son and his baseball team were champions in the tournament they were in, we had a great picnic with the team's families, who have become great friends, and we topped it off with a relaxing evening at home. Now, back to the routine, sort of....sort of, because I am taking a 2 week class that started on Friday. The class will help me renew my teaching license, and will give me some very practical knowledge for helping struggling readers. Some day, I would love to tutor struggling readers.
Anyway, I really need to be prepared in meal planning this week, as it is so busy for me!
Here is what I am thinking about:
MONDAY: Easy and Frugal Surprise pancakes with raspberries from my garden. Who doesn't love breakfast for dinner?
TUESDAY: Ham and Cheese Roll-ups (didn't plan enough time to make last week, so didn't have them.)
****I'm making the quick version. It uses Bisquick (I use 30 Day Gourmet's master baking mix).
WEDNESDAY: Sub sandwiches
THURSDAY: Angel Hair pasta with Parmesan Cream Sauce
FRIDAY: Soft tacos

I've been buying and freezing berries all month - but the idea of fresh berries on pancakes sounds so good that I'll have to save a few!
