During my meal planning yesterday, I chose to put 2 new recipes in the plan for the week. Tonight was the night to try one of them. I got the original recipe from Mr. Food's website. He called it Tex-Mex Enchiladas. As I was making them this evening, I changed the recipe a little bit. This is how I made them.
Tex-Mex Enchiladas, 2 Make Ends Meet Style
*1 cup cubed, cooked turkey
*1 cup cooked, brown rice (my new favorite: EcoLife Quick Cook Organic Brown Basmati
*2 cups shredded sharp cheddar cheese
*dried minced onion (I didn't measure, but shook some into the bowl!) :)
*1/2 can enchilada sauce
*5 flour tortillas
First of all, my recipe is divided in half from the original. I did this because I didn't have enough turkey to make the full recipe. That is also why I used brown rice...to stretch my meat farther! :)
Mix turkey and rice together. Add 1 cup of shredded cheese, the onion, and half of the sauce. Mix together. Divide this mixture evenly between the tortillas. Roll up tortilla and place seam side down in a greased 8 X 8 pan. Pour the remaining sauce on top of tortillas. Sprinkle one cup of cheese on top of the sauce.
Bake in a 400* oven for 15 to 18 minutes.
