Cowboy Bread...from my Elementary School Days!

I went to elementary school when the school lunches were home-cooked and yummy!  Probably with lots of calories and maybe not the best for you.....they sure did taste good though, I thought!  I didn't get to buy a school lunch every day, but one of the menus that I liked included "cowboy bread".  I think it was served with spaghetti, if my memory serves me correctly.  It is a tasty quick bread that goes well with pasta, or even for breakfast or a snack.  My mother has a copy of the school lunch recipes from the Bloomington Schools and I thought I would share this one with you.  (I just have to share a picture of the well-used recipe book...it is over 30 years old!!!)

Cowboy Bread
2/3 c. shortening (I use butter)
2 1/2 c. flour
1/2 tsp. salt
2 c. brown sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. nutmeg
1/2 tsp. cinnamon
2 eggs
1 cup buttermilk or sour milk**
Cinnamon, as needed

**If you don't have buttermilk, add 1 T. vinegar to milk to make one cup.
Combine butter, flour, salt and brown sugar, until crumbly.  Reserve a 1/2 cup to sprinkle on top.  Add baking powder, baking soda, nutmeg and cinnamon to mixture.  Mix well.  Add milk and eggs.  Mix well.  Pour into a 9 x 13 pan. 

Sprinkle with reserved crumbs and cinnamon. 



Bake at 375* for 25 - 30 minutes.

  5. I hope you actually read your blog. I need help. Your recipes sound like we could have attended the same school. At my elementary school we had both served to us for lunch. Now here is the big headache-for 25 years I have begged everyone at my local elementary school for our recipe book, lovingly tended by the lunch lady Dorothy. I would love to get the recipe for the buns that were served on Wednesdays, beans and buns day. If you have this recipe- please end my misery and let me know.
    Dorothy once told me, jokingly, Sure Lori its 7 pound of flour.... As if I could remember. Any help or resolution is greatly desired THANKS

  6. I was looking on-line for this exact recipe. I too, own one of these cookbooks but, my sister has it at the moment. I went to 9 Mile and remember this as one of the best breads I have ever eaten. I made it all the time when I was growing up. I used the shortening all the time. but, I think I will try the butter this time. I also remember the vinegar trick being in there too! Thanks!!!

  7. Wow this is crazy me and my friends were sitting around just talking about cowboy bread. And i thought let me google it and liw a behold other people were talking about it to. This was the best bread we ever ate. My kids sit and laugh at us like what is cowboy bread. Its crazy I grew up in Fla brevard county Cocoa and we ate the same lunch

  9. Wow! I used to eat school lunches in elementary school in Southern California back in the 80s. Cowboy bread was my favorite- and yes it was always served on Fridays with spaghetti or tacos. Thanks for the recipe!

  10. Thanks for posting this recipe. I went to school at Ridgeview Elementary in Bloomington, Penn Junior High, and Lincoln Sr High. Love Cowboy Bread! My mom had this recipe book, no idea where it went but I really wish I had it.

  11. My family attended Bloomington schools in the 1960s. Last year my brother was fighting lung cancer and I would take him meals every week or so. This was a requested food that I didn't think I would find until I came across your post! I got to bake it for him a few times before he passed away and he truly enjoyed this comfort food. Thanks again for posting this recipe.
