Oatmeal Bread...with the bread machine's help!

Yum!  This is one of my favorite bread recipes.  It brings back childhood memories of my Grandma Johnson's swedish rye bread.  Wonderful memories of her bread sliced really thin, with a little butter and sugar sprinkled on top of it!  Yum!
Nowadays, I still like butter on my bread...but I don't need the sugar on top!  LOL!
Grandma has been gone for over 30 years now, and no one seems to know where her recipe for the yummy bread is...so, my family was very happy when I was given this recipe for oatmeal bread.

This recipe is from a dear lady, Aggie.  She shared it with our "Apples of Gold" program at our old church.  The program is a mentoring program where the older women of the church mentor the younger women with ideas for the home, cooking and a Bible study too.  We all loved the wonderful meal that we got to enjoy at the end of the evening...distraction-free!!!

I have tweaked the recipe a bit by using canola oil, instead of butter.  I also tried mixing the dough in my bread machine.  It worked just fine.  After the dough is ready, I split it into 2 pans and bake it in the oven.  I always like when my bread looks like a loaf, and not a tall rectangle (which occurs if it is baked in the machine...lol)!
When I wasn't feeling well before Thanksgiving, I had my middle son add all of the ingredients to the machine for me!  After the dough was ready, I had my oldest take it out and knead it for me.  Wow...they are capable of "baking"...I need to have them help me in the kitchen more often!  ;)

Here is my version of the recipe:

Oatmeal Bread (this is half of the recipe, which fits in my machine)
*1 cup boiling water
*1/2 cup uncooked oatmeal (I use old fashioned, you could use quick cooking)
*2 T. canola oil (I use this instead of butter)
*2 T. full flavor molasses
*1 tsp. salt
*2 T. brown sugar
*2 3/4 cups unbleached white flour
*1 heaping tsp. yeast

Place the ingredients in the bread machine pan in the order they are listed (or following your bread machine directions).  Set machine to dough setting.
When dough is complete, turn out onto a floured bread board.  Knead a few times, and divide dough into two pieces.  Form to loaf shape, and place in 2 greased loaf pans.

Set the dough in a warm place to rise (loosely covered with a dish cloth), until dough has doubled.  Bake in a 350* oven for 20 - 25 minutes, until done.
