Easter Dessert ideas!

Here are a two easy desserts that I often make for Easter.

They don't take much time, and if you are still trying to decide what you should make for a special dessert, you may want to try one of these.

Lemon Squares 
*1 cup flour
*1/2 cup butter
*1/4 cup powdered sugar
*1 cup sugar
*2 T. lemon juice
*1/2 tsp. baking powder
*1/4 tsp. kosher salt
*2 eggs
Mix together flour, softened butter, and powdered sugar until crumbly.  Press into an ungreased 8 x 8 inch (or 9 x 9) square pan.
Bake at 350* for 20 minutes, or until light gold in color.  Mix together the remaining ingredients until light and fluffy.
Pour onto the hot crust.  Bake for 25 minutes, or until an indentation no longer appears when lightly touched in the middle.
Cool, and cover lightly with a dusting of powdered sugar.
Cut into squares. 

Yum!  These are so delicious!!!

Another one of my favorites is:

Cherry Cream Pie
1 can sweetened condensed milk
1/3 cup lemon juice
1/2 tsp. vanilla extract
1/2 tsp. almond extract
1/2 cup whipping cream
1 can of cherry pie filling
Mix together sweetened condensed milk, lemon juice, vanilla and almond, until thick.
Whip 1/2 cup whipping cream and fold into the milk/lemon juice mixture.  Pour into the prepared pie crust (you may use a plain crust, or a ready made shortbread crust.)  Place in refrigerator and let set for a half hour.  Pour 1 can of cherry pie filling over the top.  Serve with whipped cream, if desired. 

I can hardly wait until Sunday....
