Pancakes sounded good for supper so I decided to make them using my latest "go-to" recipe for pancakes. (Most of the time I use my tried and true recipe from my Betty Crocker cookbook, but when I want a change of pace, I have been using the following...)
I found this recipe for Flax Seed Pancakes on the back of my Stober Farms Golden Flax Meal that I bought at Sam's Club (or maybe Costco...)
Here is the recipe, and the changes that I made to it (because I typically don't have all of the exact ingredients, haha!)
Flax Buttermilk Pancakes (original recipe is here):
- 1/4 Cup - Organic Milled Flaxseed
- 2 tsp - Baking powder
- 1 cup - Unbleached White flour (recipe called for whole wheat flour)
- 1/2 tsp - Baking soda
- 1 Tbsp - White sugar
- 1 cup - Low-fat buttermilk (made my own w/ 1 T. vinegar + milk to make 1 cup)
- 1 egg
- 1/2 tsp - Salt
- 1 Tbsp - Coconut oil, melted (recipe calls for Canola oil) I buy my coconut oil at Sam's Club or Costco, you can also get it on Amazon or many other online sites
Prepare pancakes on your griddle!
