Cinnamon Buttermilk (Kefir) Bread

I've been on a soup and bread kick lately.....it happens to me during the winter.  It has a lot to do with comfort food, don't you think?  Well, after eating some cinnamon bread that my mom had brought over, I was in the mood for more!  I thought, "why not make some?"  I found a recipe in my bread machine manual.  I decided to tweak it a bit, and make it my own.  I loved how my kefir made other bread so soft, so I wanted to use it again.
Here's what I did:
Cinnamon Buttermilk (Kefir) Bread

1 cup kefir (warmed slightly)*
1/4 cup water
2 T. canola oil
4 cups unbleached white flour (you could probably use whole wheat)
1/4 cup sugar
2 tsp. kosher salt
1 1/4 tsp. ground cinnamon
2 1/4 tsp. yeast
3/4 cup raisins (optional) to be added according to your bread machine directions
*if using kefir or buttermilk, add 1/4 tsp. baking soda, to cut down on sour taste from either of these

Add ingredients to bread machine pan.  Press dough setting.  Watch to see if dough is dry as it mixes...I added a tablespoon or so of water...  When dough is finished, turn onto floured surface.  I pressed dough into a flat rectangle.  I buttered it and sprinkled cinnamon and brown sugar on it.  Roll into a tube and pinch ends.  Place in greased loaf pan.  Let rise until double in size.  Bake in a 350* oven for 30-35 minutes, until golden brown.

I was so excited that I had made cinnamon bread with a swirl in the middle!!!!  My husband said "you're gonna blog about it, aren't you?"  Absolutely!!!!  (He knows me too well!)  :)

  1. Congratulations on a beautiful loaf of cinnamon swirl bread! It looks good enough to put in a bakery window :)

    So, the trick is to let the bread maker mix the ingredients and then make the swirl yourself and bake it in the oven instead of the bread machine?

  2. Thank you for your kind words, Jenn! Yes, I have found that I prefer to mix the ingredients in my bread machine in the dough cycle. After that, with any bread, take the dough out, knead on a floured board a few times, shape into a loaf, place in a greased loaf pan and let it double in size. Then bake it in a 350 oven. This way, I get my loaf to look like a loaf of bread and not a square! I think the crust turns out better too. Give it a try and let me know your results! :)
