Tortilla Casserole

A couple of weeks ago, I told you I would share this recipe.

This recipe is from a gal that goes to our former church.  It is very nummy...easy to make, and easy to substitute other ingredients to suit your family's tastes.

Tortilla Casserole (from Lisa)---as she gave to me...with my changes included
*1 pound ground turkey, browned (I often use ground beef)
*1 onion, chopped
*1 can kidney beans, drained---I have used black beans
*shredded cheese (Mexican)---I usually use cheddar, 1 - 2 cups
*Tortilla chips
*Taco Sauce---I usually don't even use this....
*Medium Salsa---I use mild :)
Pour some of the sauce and salsa, to cover the bottom of a casserole dish.  Cover sauce with a layer of chips, 1/2 can of beans, 1/2 of the meat, and cheese....continue layering chips, salsa/sauce, rest of beans, rest of meat, chips, cheese and sauce.  Bake at 350* for one hour.
***I have often skipped the taco sauce and added taco seasoning to my meat instead.  This recipe is so flexible.  Feel free to experiment with other combinations!  We like to eat it with a little sour cream on top too!  :)
