Back to a (somewhat) regular schedule!!!

Well, I really feel as if I have been missing in action, as far as "2 Make Ends Meet" lately.

For good reason though, as I enjoyed spending almost a week of time with my sister and niece...both in town to move my niece back in for her junior year of college.  Wow, I feel old!

My sister and I live far away these days...she is in Texas and I am in Minnesota.  We are so thankful for technology...phone calls, Facebook, and even Skype keep us feeling much closer in proximity than we really are in reality.
(By the way, one of the highlights of the week was our "sibling breakfast"...just the three of us...my brother, sister and me!  So much fun!

So, as the fall is quickly approaching, I am gearing up for some fun things at "2 Make Ends Meet"...

Menu Plan Monday...week of August 20

What a fun weekend! We got to spend time with old college friends, as my college roommate was in town! We had a blast and always wonder why we don't get together more often!
In last week's post, I confessed that I had gotten burned out on menu planning and making meals, so my family encouraged me to simplify my plans.

It worked out rather well, and I will continue on with more of a regular plan, using just a few meal plans/recipes over and over.

This is what I will be making this week:

MONDAY:  Crock Pot Orange Chicken Stirfry (discovered recipe last week...have to try!)
TUESDAY:  Taco Tuesday  (w/ ground beef this week)
(My sister and niece arrive tonight, so the rest of the week might totally be something different, but I'll have a plan anyway!)
WEDNESDAY:  Baked Potato Bar (didn't make last Friday)
THURSDAY:  Chicken Cherry Pasta Salad
FRIDAY:  Crock Pot Chili (with Cowboy Bread to go along with it!)

Menu Plan Monday...week of August 13

My menu plan has been missing in action these last few weeks (it's been in my head...sort of, but not written down anywhere)!
 
I have decided to simplify my life in this area.  After chatting at the dinner table last week (or maybe the week before...haha) about the challenge of getting interesting meals on the table every day, I proposed to my family about having the same meal plan every week that includes favorite (easy) meals.
My husband said, "that would be fine".
You mean I could have been making life easier for all these years, and I didn't even know it!!!???  LOL!

So, we continued to discuss some meals that they enjoyed.  We also agreed that cold weather meals would be different from hot weather meals.
I certainly can be flexible, but it felt so good to know that my family was not expecting me to produce amazing meals every night...they are just hungry, and want to be fed!  LOL!

So, this is the plan I will be attempting, as our regular meal plan:

MONDAY:  Grilled Cheese (& deli meat, if desired) sandwiches

TUESDAY:  Taco Tuesday (chicken soft tacos this week)

WEDNESDAY:  Sloppy Joes  (other weeks this might be crock pot BBQ sandwiches)

THURSDAY:  Angel Hair Pasta (w/ sauce & parmesan cheese) and meatballs (other weeks, this might be some type of pasta bake)

FRIDAY:  Baked Potato Bar

Choices for sides:
Easy Oven Fries
Fresh Green Beans (from our garden)
Tossed salad
Cucumbers (from garden)
Carrots
Cherry Tomatoes (from garden)

I think this will make life SO much easier and stressful for me! 
This plan can easily be changed, but I am using ingredients that I normally have on hand, which is very helpful!
