"Healthier" No-Bake Fudge Cookies #tbt

Since it's Thursday, I thought I would post a #tbt (Throw Back Thursday) recipe.

This one is a favorite from my childhood!  The original version of this recipe came from the Bloomington Public Schools recipe book.  I have enjoyed making (and eating) the original recipe, but as I decided to make it today, I decided to make it healthier by adding ground flax seed meal to it.  Such an easy way to add some nutrition to these delicious treats (and I think my family may not even notice)!



Here is the recipe...so easy...so delicious!

Fudge Cookies (Unbaked)
*2 T. Butter
*1 cup sugar
*1/4 cup milk
*1/4 cup cocoa
*1/8 tsp. salt

*1/3 cup peanut butter
*1 1/2 to 2 cups quick oatmeal (I used 2 cups old fashioned oats)--made it a little drier, but still yummy!
*1/4 cup ground flaxseed meal (optional)
*1/2 tsp. vanilla

Combine butter, sugar, milk, cocoa and salt.  Bring to a rapid boil on stovetop.  Stir in peanut butter and then add vanilla, oats and flaxseed meal.  Stir until well combined.  Drop by teaspoon onto an ungreased cookie sheet, or waxed paper.  Place in a cool place to set.

My Baking for Christmas this Week

Here I am, less than 4 days to get my baking (and cleaning, and decorating) completed before we host both sides of our families for Christmas Eve and Christmas Day! I'm not in a panic......yet!  LOL!

As far as my baking goes, these are the recipes that I am planning to make (with the help of my youngest, because his teacher (me) said he could be done with school for the year)!  :D

Easy Spritz Cookies

Chocolate Mint Brownies


...and if I still have time:
Frugal Biscotti 


Snow-Top Chocolate Cookies

and I am also planning to pre-scoop my ice cream, just like my mom taught me to do!  :)

Banana Blueberry Mini Loaves & Muffins

I decided to finally use a recipe that I had taken off of the back of a bag of Pillsbury flour YEARS ago!!!  :)  I had some frozen blueberries on hand ($1.99 for 16 oz. from Trader Joe's, by the way) and thought I wanted to use them for something other than smoothies!  They turned out very good!

Banana Blueberry Mini Loaves
1 cup sugar
1/2 c. oil (I used canola)
1 cup mashed ripe banana (2 medium)
1/2 c. plain yogurt (didn't have...used 1/2 T. vinegar plus milk to make 1/2 c.)
1 tsp. vanilla
2 eggs
2 c. unbleached flour
1 tsp. baking soda
1/2 tsp. salt
1 cup fresh or frozen blueberries, unthawed

Heat oven to 350*.  Grease and flour bottoms only of three 6 X 3 1/2 inch loaf pans**.  In large bowl, beat together sugar and oil.  Add bananas, yogurt, vanilla and eggs.  Blend well.  Add flour, soda, salt and mix just until dry ingredients are moistened.  Gently stir in blueberries.  Pour into pans.  Bake at 350* for 40 - 50 minutes or until toothpick inserted in middle comes out clean.  Cool 5 minutes and remove from pans. 
**I used two mini loaf pans and one mini muffin tin.

 
  The muffins need to be checked at about 25 minutes.  I thought mine got a little dark at 30 minutes, but then I remembered it was banana bread and not blueberry muffins....they look different!!!  :)  
 
If you pay close attention, you will notice that some of the mini muffins are not there....they have already been eaten!  :)  My son and I just HAD to try a few, you know!
