Byerlys/Lunds Chicken Cherry Pasta Salad...make it at home!
This isn't my recipe, but it is a pasta salad that I just had on Sunday, at a bridal shower for my nephew's fiance'.
I have had it several times before, and it is so delicious!!! I took a chance that Byerlys/Lunds might actually share the recipe on their website, and sure enough, here it is:
Chicken Cherry Pasta Salad
We eat it plain, without serving it on spinach leaves. I'm sure that would be very nummy too (and it makes it healthier!) :)

Menu Plan Monday...week of June 20
I hope you all enjoyed your weekend! Ours included some baseball games, some cancelled baseball games (rain) and dinner out as a family for Father's Day. :)
We have baseball games every evening this week, which makes things challenging. But here is my plan for the week:
MONDAY: Egg Salad sandwiches (My husband and I love them...will find out who else likes them, I guess) Actually, my middle boy is gagging as he reads this over my shoulder!!! LOL! :) He might have to make himself a pb and j sandwich!
TUESDAY: Soft Tacos

Tuna (Pasta) Salad
This is such an easy recipe, that I don't even think of it as a recipe at all!
My husband and I really enjoy it, and my two oldest have learned to enjoy it too. Still working on my 9 year old, but I am hoping that the more he is forced to eat it, he will start to like it too! Haha!
Tuna (Pasta) Salad
*Cooked pasta, preferably small rings (or other small pasta)
*1 can Solid White Albacore tuna (the only tuna I use)
*Miracle whip
*Frozen peas
*Salt and pepper to taste
I have never used a recipe before, but this is what you do:
Cook pasta according to directions. Rinse with cold water. Mix in Miracle Whip (or mayonnaise) one tablespoon, at a time, to the desired creaminess. Mix in a 1/2 cup of frozen peas (or more, if you would like). Drain the can of tuna, and break the pieces apart. Add the tuna to the pasta and mix.
Add salt and pepper to taste. Cover and chill until ready to serve.
(I find that this salad can dry out quickly. If it is stored in the fridge overnight, you may need to add more Miracle Whip before serving.) Pin It

Menu Plan Monday (Tuesday)...week of June 13
First full week of summer vacation and I was up at 6 a.m. Monday morning!!! Oh, the things we do for our children...it was the start of basketball for the high school players (and potential players). Since my oldest wants a chance for a spot on the team, guess what we are doing Monday, Wednesdays and Fridays for most of the summer????
Well, I must say it was a good way to get me out of the house for a walk with the dog afterwards! :)
For some reason, I forgot to get my menu plan typed up, so here it is:

My youngest just LOVES to participate in Summer Reading Programs.
Here are the three that we are (or will be) involved in this summer.
1. Barnes and Noble
Kids in grades 1 - 6 can earn a FREE book when they read 8 books this summer (from a preselected list).
2. Half Price Books
For ages 14 years and under. Qualifying participants who read 600 or more minutes during June and July may receive Back to School Bucks in the amount of $5, a coupon to be applied to pre-tax amount for a future transaction. Back to School Bucks coupon valid 07.25.11 – 08.31.11 only.
3. Our local (county) library
Check your local library for children and teen programs.

My Job Chart...FREE online job chart for your kids!
Maybe I am the last one to know about this cool tool, but I just came across My Job Chart while visiting Life as Mom today.
This is SO cool! If you are like me, you have tried a number of ways to get your kids to consistently help out around the house...it seems in my house that we go in spurts...a system will work for awhile, and then fail....we do nothing for awhile...try a new one....fail....and on it goes!!!
The thing that intrigues me about My Job Chart is that it uses the computer...my boys LOVE to use the computer and they would be happy if I told them they SHOULD use the computer! LOL!

2. Kids earn reward points that they can share, save and spend.
3. Kids can redeem these rewards for actual items on Amazon.

Menu Plan Monday....week of June 6
Off to a fresh start...with the Memorial Day holiday last weekend, and my computer malfunctioning, I didn't even write a menu plan. I could have at least written it down on paper, you would think, but I didn't!!! That is really why I write a menu plan post each week....to keep me accountable to actually making a menu plan! :)
After an absolutely beautiful weekend, here is my plan for the week:
MONDAY: Hamburgers on the George Foreman Grill (I really am wanting a charcoal grill these days....)
TUESDAY: Pork Chops in the Crock Pot
WEDNESDAY: Easy Chicken Pasta Salad
THURSDAY: Sandwiches, Diners Choice
FRIDAY: Grilled Chicken on Salad Greens
