Menu Plan Monday (Tuesday)....week of May 23


Yesterday was my birthday....so I took the day off from posting on my blog.  I also pretty much took the day off from cooking and meal planning.  :)  I did get go out and redeem several freebies from e-mail clubs I am a part of...so fun!  Now, I need a plan....

MONDAY:  Leftover from birthday dinner at Applebee's on Sunday night...mmm...Orange Chicken Bowl!  :)  (That was MY dinner anyway!)  :)

TUESDAY:  Crock Pot BBQ Pulled Chicken sandwiches (a variation of this recipe).  I will try and get these rolls made to go with them.

Frugal Ice Cream Sandwiches....easy too!!!

As I was snacking on a graham cracker last night, my 9 year old was scooping some ice cream for his brother and himself. 

I had a "remember when" moment....

My mother ALWAYS made little homemade ice cream sandwiches for us when we were little!!!

Super easy and much cheaper than buying real ice cream sandwiches, I would think.....

So, after I made myself one and preceded to eat it, I thought, "I am writing a blog post about these!!!"
 




Frugal Ice Cream Sandwiches
*Ice Cream, any flavor
*Graham Crackers, any flavor too

1.  Carefully break each graham cracker in half.  Place a scoop of ice cream on one half of the cracker.



2.  Cover the ice cream with the other cracker half.



Carefully press down, so you don't break the crackers!


3.  If you are not eating them immediately, or if you can make them without your children seeing them, wrap each sandwich with saran wrap.

4.  Place them in the freezer, in a freezer bag.  (I'm not sure how long they will stay good in the freezer, but if your house is like mine....it doesn't matter...they will be gone in a few days anyway!)  :)


Sure, there are fancier ice cream sandwiches you can make (with cookies, or rolling the edges in sprinkles or other toppings) or you may still want to buy "real ice cream sandwiches", but these little ones will get you by "in a pinch" if you are in the mood for one. Enjoy!

My Upside Down Tomato/Basil Basket!!!

I LOVE Spring!!!

One, of the many, things I love is planting containers with flowers.  Yesterday though, my youngest and I planted something other than flowers in a hanging basket.....

I had seen a short video as I watched Swagbucks TV (to earn some extra Swagbucks...yay!  Don't know about Swagbucks?  Learn more in this post.) and the video was a segment from a gardening show.  The woman was showing how you could plant a tomato plant, upside down, through the bottom of a hanging basket.  On the top side of the basket, she planted basil and marigolds...two more plants that can handle full sun.

Now, I had always seen the ever-popular Topsy Turvy Tomato Planters, but had never tried using one.  I don't necessarily care for the look of the Topsy Turvy planter, and loved the idea of the one shown on this video segment.

So yesterday, on the way home from errands, I asked my youngest (who loves to plant with me) if we should stop at Mills Fleet Farm (actually he told me I said "Menards", but he should have known I meant "Fleet Farm"....I can't understand when my children can't read my mind...;))  Anyway....he liked that idea, so off we went.

I purchased a hanging basket with the coco liners (very similar to this one), for a whopping $3.49!  I didn't know they were so reasonable.  Then we bought a "Red Grape" tomato plant, a 4 pack of yellow marigolds, and a "Dwarf Basil" plant.

We poked a hole in the bottom of the coco liner, and gently pushed/pulled the tomato plant stem and leaves through the bottom.  I filled dirt around the tomato's soil, and then placed the other plants where I wanted them, and filled the spaces in with soil.


Hurray for fresh basil and tomatoes this summer!!!!!!!!!


Now, it is hanging outside our walk-out patio doors....hopefully the deer won't be bold enough, to walk that close to the house, to nibble on it....

Menu Plan Monday....week of May 16

We have finally been having some spring-like weather...yay!  What a good dose of sunshine can do to boost one's spirit!  Love it!  :)

I also am so happy to report that I have been serving LOTS of fresh veggies to my family for snacks and meal times.  We are all really enjoying it.  After writing this "fresh veggie" blog post, a friend of mine told me what she does for her family.  She uses a Tupperware Veggie Server that she bought on e-bay, and fills it with fresh veggies after a trip to the grocery store.  The veggie server can be covered and stored in the refrigerator, and taken out for lunch, dinner and snack time.   I was so excited last week when I found one of these servers at Good Will for $3.99 (they retail for $40)!  Woo hoo!!!  I filled it up with carrots, cherry tomatoes, sliced cucumbers, broccoli, and I even dared to buy some sweet peppers (my friend said her children eat them like an apple)!  It has been great, and my family has been eating MORE vegetables!  Maybe I am just "behind the times", and maybe the rest of you have always done it this way, but I am excited!!!!  :)

Now, on to my menu plan.  This is what we will be eating (besides vegetables):

MONDAY:  Mom-Style Burger Helper (great recipe from 30 Day Gourmet)

TUESDAY:  Easy Chicken Pasta Salad....'cause it's SO easy to make, and they eat it!  :)

WEDNESDAY:  Spaghetti

THURSDAY:  Pizza Burgers

FRIDAY:    Ham and Cheese Melts

Nothing fancy, just good home cooking...

Works for Me Wednesday...repurposing make up bags

I love Clinique make up, and even though I rarely splurge on their products anymore, my mother still does for me from time to time.  The wonderful thing about Clinique, and I'm sure many other department store makeup companies, are their bonus offers that they make available when you buy a certain amount.

I love getting these bonuses...anything from lipstick to moisturizer, etc.  The fun thing too, are the makeup bags and accessories that come with them.

The downside is that I cannot possibly USE all of these bags....for makeup anyway.

Here comes the repurposing....all it takes is a little creativity.

Here are ways that I have repurposed my plethora of freebie bags:

1.  My camera fits neatly in the following bag.
2.  When my boys were young, .many small bags were filled with Hot Wheels, Little People and more to keep them entertained when we were out.

3.  These small bags are great for small pads of paper and crayons and/or markers inside...again to have on hand when needed for little ones.

4.  Sunglasses, or reading glasses would fit nicely in the same one I use for my camera.

Simple Cherry Tomato Couscous Salad

This is totally made up by me....

I had some leftover couscous that my son had fixed the other day (so easy to fix with chicken broth), and I really wanted to use it up.  I also had some cherry tomatoes, manager special at Cub Foods the other day.

This is the super easy salad I made, and I will call it:

Simple Cherry Tomato Couscous Salad
*Cooked couscous 
*WishBone Light Balsamic & Basil Vinaigrette
 *Cherry Tomatoes, cut in half

I poured a little of the vinaigrette over the couscous and mixed it together.  I cut the cherry tomatoes in half (as many as you want), and tossed until they were well coated.



I have to say it was rather delicious.

Now, I'm not sure that my family would eat any of this...but that's okay.  It was a good lunch for me!  :)

What an absolutely gorgeous weekend!  :)  I am so thankful for beautiful spring weather.  We have been waiting a long time for it!
To top it off, it was Mother's Day and I got to spend the day with my wonderful family.  :)


I really need to use up what I have on hand, so here is what I am planning this week:

MONDAY:  Easy French Toast Bake 


TUESDAY:  Easy Spaghetti Pie   

WEDNESDAY:  Hamburger Gravy over Mashed Potatoes

THURSDAY:  Chicken Pasta Salad with Dried Cranberries (basically this recipe, but use craisins, instead of grapes)

FRIDAY:  Hamburgers on the George Foreman Grill (if the weather cooperates, because I use this outside on my deck...so I don't stink up my house!)
