Well, it's Friday again! Yay! I kind of like the theme that I have going for Fridays now....De-Frazzling my Friday. Hopefully, little by little I will be getting myself more organized. I have very high expectations of myself, which is a good thing, but in reality, I just can't seem to get it together. That's where the conflict occurs! But, instead of beating myself up about it, I will just keep plugging away at organizing....baby steps, as FlyLady would say! :)
So here is my "project" for this Friday....the counter next to my phone (which is also by the sink & dishwasher and can cause much grief if all the papers get wet!!!)
And, this is how I want it to look....
Now, before you get too excited and think I already took care of all the papers....I didn't....yet! I still need to clean out my file folders and maybe find a spot in the cupboard for them instead. My thought to having the files on the counter originally was to be able to file the papers right away. It was a good idea, and still is, but it doesn't happen all of the time. The cupboard might work but unfortunately, the space that I am thinking about using, currently looks like this:

Crock Pot BBQ Pulled Pork Sandwiches
You don't really need a recipe for the pork portion of this recipe. It is very easy. In the morning, I place my pork roast (any different kinds will work...I don't know all of the cuts of meat! Hee hee!!) in the crock pot on low. I don't even add any liquid at this point. After it has cooked on low all day, I will start pulling the pork apart. I find it helpful to hold the meat with a fork and pull "shreds" of meat off with another fork. Then I will add the BBQ sauce to it. Here is the sauce recipe:
Homemade BBQ sauce
*1/2 c. tomato sauce
*1/2 c. sugar
*2 tsp. worcestershire sauce
*6 T. vinegar
Makes approximately one cup. Can be doubled for this recipe if you have a large portion of pork or if you like a lot of sauce in the sandwich!
I will let that simmer in the crock pot for at least a half hour. Sometimes I have fixed the pork roast one day, and then put it back in the crock pot on day 2 with the BBQ sauce. You can be very flexible with this recipe.
After the BBQ has simmered with the pork, place scoops of pulled pork onto hamburger buns. Enjoy! :)

Menu Plan Monday....May 24
Well, this is something new that I am trying. Hopefully, it will help me feel a little more organized in my kitchen! I am inspired by the many blogs I love to read. Several of them post their menu plans for the week on Monday. So, with a little thought, I am going to try it this week. I'm not going to stress out if it doesn't come to fruition, but at least I will attempt it! Here goes:
Monday: Pulled Pork sandwiches with homemade BBQ sauce (in freezer already, yay!)
Tuesday: Soft Tacos (Ground Beef)
Wednesday: Chicken Pasta Salad
Thursday: Super Easy Chicken Enchilada Skillet
Friday: Hamburgers on the (George Foreman) Grill
Wow! It feels good to have a plan! And, like I said, if I don't follow it exactly, it's okay....I think it will help to have it written down ahead of time. I will plan to post the recipes after I make them (so I can have pictures for you)!

De-Frazzling my Friday!!!
Defrazzling....is that a word? Whether it is or not, I am trying to de-frazzle my Friday! :) In last Friday's post I referred to the way the clutter in my house makes me feel. FRAZZLED!!! So today I wanted to tackle my kitchen island.
How does it get this way??? It might not look THAT bad, but you can't see the depth of the pile! LOL!! Part of the problem of my clutter in the kitchen is that it is my "office" also. We have our computer in the kitchen, which I really love, but my "office" spills onto my island (and the rest of my kitchen counters!) It is also a favorite spot for my boys to do their handwriting and math work. Sometimes they forget to put their work away where it belongs.
Enough with the excuses....just dig in!

On-the-Go Italian Scones
This was totally an experiment!!!! I think it will be a recipe though, that I will enjoy adjusting with different ingredients. My inspiration came from Family Fun magazine's recipe for Pizza Scones. I loved the idea because it is more on-the-go food for our busy baseball season. I wanted to give it a try. When I read the ingredients for the pizza scones, I wondered if my Very Easy Scones recipe would work for the base. I love my recipe, because it has less ingredients and uses canola oil instead of butter. Then, I thought, since I am using italian seasonings, why not use olive oil instead of canola oil!!! Even better for you!!! :) This is what I came up with....
On-the-Go Italian Scones
*2 c. flour
*2 tsp. (heaping) baking powder
*1 T. oregano
*1/2 tsp. basil
*1/4 tsp. kosher salt
*1 cup shredded cheese (I used half cheddar/half mozzarella)
*1/3 c. olive oil (gives a very distinct flavor, you could use canola oil)
*2/3 c. milk
(Optional ingredients to add: chopped up pepperoni, sun-dried tomatoes...)
Preheat oven to 400*F. Grease cookie sheet. Mix dry ingredients. Add shredded cheese. Mix oil and milk. Add to dry ingredients. Stir until moistened. Turn onto a floured board, or use a little corn meal, if you have on hand. Knead into a ball, and then form into a flattened circle, about an inch thick. Cut into 8 - 12 wedges, depending on the size you would like to make. Place wedges on cookie sheet. Bake at 400* for approx. 13 - 15 minutes. The time will vary depending on the thickness of your scones. Bake until a light golden brown.
As usual, I had mixed reviews at home. But, as long as, a few liked them, I consider them worth making again. One of these days, I will make the Family Fun version too, just to compare.

Saturday Stumbles...things worth sharing that I read this week!

Enough is Enough!!!! I need to de-Frazzle my Friday!
Last weekend in the St. Paul Pioneer Press I read a fabulous article. Here is a link to it. The article is about a mom who was fed up with the clutter in her house. Sounds just like me!!!! She started doing something about it though, and at the same time shared her story on her blog, The Snyder 5. Well, let me just say....I am inspired!!!! I don't have plans to try and get rid of 500 pounds of clutter, although it might end up that way, but I am determined to tackle this clutter, a little bit at a time!!! This has been an ongoing struggle for me....how to take care of all of this stuff. It makes me frazzled, edgy and frustrated when the house is in disarray. It's not fair to my family, because then I am crabby at them. Enough is enough!

On-the-Go Snack Mix...Frugal too!
In my quest for on-the-go meals to have on hand for sports nights, I remembered something that I use to always bring along with me in the days of carrying a diaper bag (those days seem like sooo long ago)! I always had some snack along, in case hunger struck the little ones, or me, for that matter! Since I have the pleasure of only having to carry my purse wherever I go, I had forgotten about the wonderful little snack mixes I used to make....a lot!
This is a great idea for eating on the go, and you can create endless varieties. I am referring to make your own snack mixes, using cereals, nuts, pretzels, raisins, you name it....it is also a great way to use up the last little bit of cereal in each box. (For some reason, we have about 6 boxes of cereal in the cupboard, with about a 1/2 cup of cereal in each....but I'm off topic now....)
This will be great a great on-the-go snack for going to the games, for the fans watching the games, and for some nourishment on the way home from the games....I better make a BIG batch!!!
On-the-Go Snack Mix
*1 cup Honey Nut Cheerios (Oatmeal Squares, any Chex cereals, Fruit Loops for a special treat, cereals that aren't too fragile...)
*1 cup Mini pretzels, or pretzel sticks
*1 cup Raisins (or other dried fruit...banana chips, apricots, pineapples)
*1/2 cup Chocolate chips (in colder weather), or 1 cup M&Ms (any variety)
*1 cup Almonds, peanuts or any nuts...unless there are allergies in your family
*1 cup mini marshmallows
Of course, choose ingredients that your children will enjoy. Sometimes I have found they might not like a cereal with milk, but they love it in the snack mix. (The added treats seem to help them eat all of the mix also.)
The amounts don't have to be this specific...I sometimes just "eyeball it" and put together a mix that looks good!
Place the mixture in a large airtight container or ziploc bag. Another idea is to place individual portions into snack bags and store them in a large container to grab on-the-go! These are so much cheaper than buying snack mixes!!!

Apple Breakfast Bread
I decided to try another recipe using Designer Whey Protein Powder. My kids seem to be "starving" all of the time and I thought that adding a little protein powder to snacks and/or breakfast foods might help curb the hunger a little!!! :)
I made the Apple Breakfast Bread. You can print the pdf file from Designer Whey.
Apple Breakfast Bread
*1/2 c. butter
*1 c. sugar
*2 eggs
*1 1/2 c. flour
*1/2 c. Designer Whey French Vanilla
*1 tsp. baking soda
*1/2 tsp. salt
*1 tsp. ground cinnamon
*1/2 tsp. ground cloves
*2 apples--peeled, cored and chopped
Preheat oven to 350*. Lightly grease an 8x4 inch loaf pan. Mix butter and sugar til smooth & creamy. Add eggs. Mix. In separate bowl, mix the dry ingredients. Mix into butter mixture until moistened. Fold in apples. Place mixture into loaf pan. Bake 1 hour, until toothpick inserted in center comes out clean. ***Note...I would check this at 55 minutes. My loaf got a little dark at 60 minutes. Cool in pan for 15 minutes before removing to a wire rack.
The review: 2 out of my 3 boys tried it and liked it pretty well. One comment was the apple pieces were too big. I think it would be good with applesauce instead of apple chunks next time!

Local Discount Websites....Groupon, Living Social and Crowd Cut
I have had the pleasure this week of receiving 2 fabulous deals from websites that, I believe, are nationwide, yet have local deals. The first deal came from LivingSocial.com. I was able to buy a certificate worth $20, but only pay $10, for a local bakery. Living Social has the added benefit of referring friends and then getting your deal FREE. If 3 of my friends had purchased the bakery deal, I would have earned another $20 FREE!!! Wow! Also, when a friend uses your link to sign up, they’ll get $5 in Deal Bucks to help them buy their first deal. Once they do, you’ll get $5 as well!
The other deal came from CrowdCut.com and I received a FREE any size, any beverage at Dunn Bros. coffee!! (I already redeemed that offer! Mmm!!) Crowd Cut is based in Minneapolis/St. Paul. If you sign up for a FREE account, you can refer friends. If they sign up, you get $10 of CrowdCut bucks to spend!
The other nationwide site that I know of that has fabulous daily deals is called Groupon.com. I have never ordered a deal from them, but I think it would be great too, if they offered just the right deal. They too, will let you refer friends and earn $10 in Groupon bucks.

Just wanted to share some very cool things from Betty Crocker's website. I have visited there before to find recipes and coupons. I didn't realize all of the other fun things available. Here are a few things you might want to check out too:
Betty Crocker's mobile cookbook for your IPhone!!! (I don't have one, but if I did, I think this would be fun.)
Betty Crocker Kitchen Assistant is a desktop application that you download to your computer. It is like a cookbook, but better. Recipes, tips, and more without an internet connection.
The Great Cereal Giveaway is a contest to win FREE boxes of General Mills cereal each month this year.
Mighty Giants is a fun site for kids to explore healthy eating.

Cowboy Bread...from my Elementary School Days!
I went to elementary school when the school lunches were home-cooked and yummy! Probably with lots of calories and maybe not the best for you.....they sure did taste good though, I thought! I didn't get to buy a school lunch every day, but one of the menus that I liked included "cowboy bread". I think it was served with spaghetti, if my memory serves me correctly. It is a tasty quick bread that goes well with pasta, or even for breakfast or a snack. My mother has a copy of the school lunch recipes from the Bloomington Schools and I thought I would share this one with you. (I just have to share a picture of the well-used recipe book...it is over 30 years old!!!)
Cowboy Bread
2/3 c. shortening (I use butter)
2 1/2 c. flour
1/2 tsp. salt
2 c. brown sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. nutmeg
1/2 tsp. cinnamon
2 eggs
1 cup buttermilk or sour milk**
Cinnamon, as needed
**If you don't have buttermilk, add 1 T. vinegar to milk to make one cup.
Combine butter, flour, salt and brown sugar, until crumbly. Reserve a 1/2 cup to sprinkle on top. Add baking powder, baking soda, nutmeg and cinnamon to mixture. Mix well. Add milk and eggs. Mix well. Pour into a 9 x 13 pan.
Sprinkle with reserved crumbs and cinnamon.
Bake at 375* for 25 - 30 minutes.

Target and Rainbow Deals....week of May 2
I have been highlighting Rainbow and Target deals every Monday for a little while now. I have discovered that there are several great websites out there that have done a fabulous job of matching up coupons with current sales. So, rather than duplicate what they have done, I thought I would give you the link to these sites. CouponMom is one that I have known about for a long time. She posts grocery and drug store deals by state, linking them with coupons from the Sunday paper inserts and online printable coupons.
Pocket Your Dollars also does a fabulous job linking up sales to coupons for you. Her site also includes Rainbow Foods, which the first site does not have listed.
